The process of transforming a tiny egg into the main course is a long one. With years of experience in Red Tilapia production, Royal Fish has conquered the market through the quality of its products. 1. GENETICS

After many years of continued research, Royal Fish is currently the holder of one of the best tilapia genetics in the world. The work that has been done over the years has enabled our company to reach higher standards of quality in freshness, succulence and nutrition. Our commitment to improve our product is an on-going process and will never stop.

2. REPRODUCTION

The fish are bred and the eggs are collected weekly and sent for incubation. After 5 days the tilapia larvae hatch. After 40 days in greenhouses, they are sent to our farm.

3. FARM

The fingerlings are transported in specialized vehicles, which is where the fattening process begins. After 6 months, the fingerlings that weighed 1g reaches 750g and are ready for commercialization. The fish is then sent to the processing plant.

4. PREPARATION

The fish are removed from the refrigerated trucks in temperatures of approximately 0°C covered in ice. They go through a process of scale removal then filleting.

5. FILLETING

In this step, the filleting is done without visceral exposure, avoiding contamination. The skin is then either removed from the fillet or sent straight to processing, where it is trimmed and finished. The “V” shaped cut procedure is done ensure that no bone remains in the meat.

6. PACKAGING

Finally, the fillets are separated per size and conditioned in isothermic packaging with a “pack gel”. The time between the removal of scale and packaging is less than 1 hour. After that, the fillets are ready for shipping.

7. DISTRIBUTION

After the packaging, the finished product is transported to our clientes (hotel, restaurants, supermarkets, fish markets) in Brazil and all over the world. 24 hours after the beginning of processing, the fish can be in your plate ready for consumption.
